Creamy potato soup with chunks of red-skinned potatoes and spicy tomatoes with green chilies

Ingredients
  • PAM® Original No-Stick Cooking Spray
  • 1 pkg (11 oz each) creamy potato soup mix
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes-No Salt Added, undrained
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 4 cups water
  • 1 pound small red potatoes, scrubbed, cut into bite-size pieces
 
Directions
  1. Spray inside of slow cooker with cooking spray. Combine soup mix, undrained tomatoes, water and potatoes in slow cooker.
  2. Cover; cook on LOW 8 hours or on HIGH 4 hours or until potatoes are tender.

This soup was incredibly easy to make, it took me maybe 5 minutes. I only used 1/2 the can of Rotel as I am not one for spicy foods, but I think the soup could've used a bit more zing. I added basil and garlic. I would make this again since it was so simple.

it's a great recipe but I would caution you to use only 1/2 can of Rotel because it is very spicy with the whole can. I used 1/2 Rotel and 1/2 diced and it was better the second time I made it.

I love this recipe. It took me 5 - 10 mins to prepare and I was able to go to work and have supper waiting when we got home. My family also loves their meat so we added some Ham it. It was delicious!

Way too hot for me!!! Couldn't enjoy the taste of it because it set me on fire! I plan on making it again, without the rotel!

I figured this recipe would either be really good, or really bad. It was terrific! I followed the recipe exactly and it's a snap. I tried the Bear Creek brand for the dry potato soup mix. I didn't use the No-Salt tomatoes, just the regular ones (saltless food is way too flavorless, IMO). It yields a lot and is very thick and hearty, also has a peppery ZIP to it because of the chilies. A blustery snowy day outside today, and the perfect dinner. Mmmmmm

I'm a widower and made this late this afternoon as a lenten dish. It was outstanding! I also had some salmon on the side. It was a rather decadent meal. It's certainly worth a try..... Very yummy!
