Corned beef and noodles are used in a skillet recipe flavored with sauerkraut and Thousand Island dressing and finished with Swiss cheese

  • 8 ounces dry wide egg noodles, uncooked
  • PAM® Original No-Stick Cooking Spray
  • 3/4 cup chopped green bell pepper
  • 1 can (12 oz each) Libby’s® Corned Beef with Onion
  • 1 cup sauerkraut, rinsed, drained
  • 1/2 cup Thousand Island dressing
  • 1/3 cup reduced fat (2%) milk
  • 1/8 teaspoon ground black pepper
  • 1/2 cup shredded Swiss cheese

Purchase ingredients from Peapod or Amazon

  1. Cook noodles according to package directions, omitting salt. Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.
  2. Add bell pepper; cook 2 to 3 minutes or until tender. Add corned beef; cook 2 to 3 minutes more or until crumbled and browned lightly, stirring occasionally.
  3. Add sauerkraut; stir to combine. Cook 1 to 2 minutes or until hot. Add dressing, milk, pepper and cooked noodles; stir gently to combine. Sprinkle with cheese.

Made this the other night. Was skeptical, but pleasantly surprised. My hubby gave it an 8-1/2 out of 10, so it was pretty amazing. The flavors blend together so well. Not really too Rubenesque, but still very good flavor. Very filling. Had leftovers. Can't wait to heat them up and enjoy.
