1 cup plus one tablespoon Earth Balance® Original Buttery Spread
2 cups firmly packed light brown sugar
1 pkg (12 oz each) chocolate chips
1/2 cup natural creamy peanut butter
1/2 teaspoon flaky sea salt

Preheat oven to 350°F. Line a large rimmed baking sheet with aluminum foil. Butter bottom and sides of pan with one tablespoon of buttery spread. Place matzos on baking sheet, breaking to fit and cover the whole pan.
Melt remaining 1 cup buttery spread in large saucepan; stir in brown sugar and bring to a boil. Boil 5 minutes, stirring constantly. Immediately pour in an even layer over the matzos. Bake 10 minutes.
Remove brittle from oven and pour chocolate chips over the top. Let them sit for about 2 minutes, until melted. Spread in an even layer. Place peanut butter in a small microwave safe bowl and microwave 30 seconds. Pour peanut butter onto chocolate. Use a table knife to swirl chocolate and peanut butter together. Sprinkle salt evenly over top.
Refrigerate 20 minutes, until chocolate and peanut butter are set. Break into smaller pieces and enjoy.
