6 ounces dried plums
1/4 cup chopped jalapeno peppers (seeds included)
2 tablespoons cider vinegar
1 tablespoon chia seeds
1 cup water
1 pkg (9 oz each) Gardein® Seven Grain Crispy Tenders
8 frozen home-style waffles (or vegan option)
8 slices tomato
8 red onion
8 sprigs fresh cilantro

In a small pot with a lid, add dried plums, jalapeno, vinegar, chia seeds and water. Bring to a boil over high heat. Reduce heat to low and simmer 15 to 20 minutes, stirring occasionally. Remove from heat and cool in refrigerator for at least 2 hours. Blend jelly until smooth in a blender.
Once jelly is ready, prepare 7-grain tenders according to package directions.
Toast waffles and cut each in half. Lather one side of waffles with jelly. For each sandwich top one waffle half with one tender, tomato slice, onion ring, and sprig of cilantro. Top with another half jelly side down and secure with toothpicks.
