1 pound boneless skinless chicken breasts
1-1/2 teaspoons kosher salt, divided
1/3 cup butter
1 small onion, chopped
2 medium ribs celery, chopped
2 medium carrots, chopped
1/3 cup all-purpose flour
1-1/2 cups chicken stock
1 cup half-and-half
1/2 teaspoon poultry seasoning
1/4 teaspoon ground black pepper
1 bag (10 oz each) Birds Eye® Steamfresh Sweet Peas
1 frozen puff pastry sheet, thawed
beaten egg, optional

Preheat oven to 425°F. Spray 2.5-quart baking dish or deep-dish pie pan with cooking spray. Place chicken breast in pan and season with 1/2-teaspoon salt. Roast chicken 18 to 20 minutes, until no longer pink in center (165°F).
Melt butter in a large saucepan over medium heat. Cook onion, celery, and carrots in melted butter until softened, about 5 minutes, stirring occasionally. Stir in flour; cook 1 minute.
Stir in chicken stock, half and half, poultry seasoning, remaining 1 teaspoon salt, and pepper; bring to a boil, stirring constantly until thickened. Reduce heat to low and cook until vegetables are tender, and gravy is very thick, about 15 minutes, stirring occasionally.
Microwave peas according to package directions. Chop cooked chicken into bite-sized pieces. Stir chicken and peas into gravy.
Pour chicken mixture into baking dish that you used for the chicken. Roll out dough and cut to fit, if needed. Carefully place dough on top of chicken mixture. Use a sharp knife to cut some vents in the dough. Brush with beaten egg, if desired.
Bake chicken pot pie 15 to 20 minutes, until crust is golden brown. Cool 10 minutes and serve your chicken pot pie!
