1 pound ground beef
1 large shallot, finely chopped
2 small cloves garlic, minced
1 each red bell pepper, seeded and chopped
1/2 teaspoon kosher salt
1 bag (10 oz each) Birds Eye® Steamfresh® Veggie Made™ Original Riced Cauliflower
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
4 ounces Velveeta®, cut into cubes
1/4 cup fresh cilantro, chopped

In a deep 12-inch skillet over medium-high heat, add beef, shallots, garlic, red bell pepper and salt. Cook, stirring occasionally, until beef is browned and no longer pink, about 7 to 10 minutes.
Meanwhile, microwave riced cauliflower according to package directions.
Add Ro*Tel® to skillet and cook, stirring continuously, until the liquid has mostly evaporated. Add Velveeta® and continue to cook until completely melted and incorporated. Remove from heat.
Add riced cauliflower to skillet and stir until well blended. Portion into bowls, garnish cheesy cauliflower rice with chopped cilantro, and serve.
