1/4 cup honey
1/4 teaspoon crushed red pepper flakes
2 eggs, separated
1-1/4 cups all-purpose flour
1-1/4 teaspoons baking soda
1/4 teaspoon salt
1 cup lowfat buttermilk
4 tablespoons unsalted butter, melted
1 cup shredded sharp Cheddar cheese
2 tablespoons chopped fresh chives

Preheat oven to 225°F. Place wire rack on baking sheet in oven. Stir together honey and red pepper flakes in small bowl; set aside.
Beat 2 egg whites in medium bowl with an electric mixer on medium-high speed until soft peaks form, about 2 minutes. Stir together flour, baking soda and salt in large bowl. Stir in 2 egg yolks, buttermilk and melted butter until well combined. Gently fold egg whites, cheese and chives into batter.
Spray grids of waffle iron with cooking spray; preheat according to manufacturer’s instructions. Place batter on grids of waffle iron according to manufacturer’s instructions, cooking until golden brown. Place waffles on pan in oven to keep warm.
Spray large skillet with cooking spray and heat over medium-low heat. Fry 4 eggs to desired doneness. To serve, drizzle each waffle with hot honey, top with 2 slices of bacon and an egg; garnish with additional chives, if desired.
If you like to cook your bacon in the oven, cook it before making the waffle batter. Drain and place in a baking dish. Turn your oven down to 225°F. Put it back into the oven to keep warm after making your waffle batter.
