Egg whites and white Cheddar cheese surrounds broccoli, roasted red pepper and Canadian bacon in a colorful vegetable breakfast casserole

  • PAM® Olive Oil No-Stick Cooking Spray
  • 1-1/2 cups fresh broccoli florets, halved
  • 1/2 cup chopped Canadian-style bacon
  • 1/2 cup shredded white Cheddar cheese
  • 1/2 cup chopped roasted red peppers
  • 1 carton (16 oz each) Egg Beaters® 100% Liquid Egg Whites
  • 1/2 cup fat free milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 wheat English muffin, halved, toasted
  1. Preheat oven to 350°F. Spray 8x8-inch baking dish with cooking spray. Place broccoli, bacon, cheese and peppers in dish.
  2. Combine Egg Beaters, milk, salt and pepper in medium bowl until blended. Pour over broccoli mixture in dish.
  3. Bake 35 minutes or until set. Serve casserole on muffin halves.
