1 pkg (15.25 oz each) Duncan Hines® Signature Red Velvet Cake Mix
1 cup water
3 eggs
1/2 cup vegetable oil
3/4 container (16 oz each) Duncan Hines® Creamy Vanilla Frosting
2-1/2 cups white chocolate chips
2 tablespoons coconut oil
chocolate or rainbow sprinkles

Preheat oven to 350°F. Spray a 9x13-inch pan with cooking spray.
Beat cake mix, water, eggs, and oil in a large bowl with an electric mixer at low speed for 30 seconds. Beat on medium speed for 2 minutes. Pour batter into pan.
Bake 23 to 28 minutes, until toothpick inserted in center comes out clean. Cool completely on wire rack.
Lay out a 24-inch sheet of plastic wrap. Break off large chunks of cake and crumble them into a large bowl to make a fine crumb. Stir in frosting until well blended. Transfer cake mixture to plastic wrap and shape into a log, about 12 inches long. Roll up plastic wrap and smooth out the log shape so the cross-section is an oval about 2x3 inches. Freeze 15 minutes.
Line a baking sheet with waxed paper. Remove cake log from plastic wrap and slice into 12 even slices. Insert a popsicle stick into each slice and place on baking sheet. Freeze for at least 30 minutes.
Pour white chocolate chips and coconut oil into a 2-cup microwave safe liquid measuring cup. Microwave 30 seconds. Stir and continue microwaving in 15-second increments until melted; stir until smooth.
Remove cakesicles from freezer. Dip one cake popsicle at a time into the melted chocolate, letting excess drip off, and return to lined baking sheet. Decorate immediately with sprinkles, if desired. Refrigerate until chocolate is set. Store cakesicles in the refrigerator until ready to serve.
Use any combination of cake and frosting that you love!
When all cakesicles are covered with white chocolate, pour excess white chocolate into a resealable food storage bag. Cut off one corner of the bag and drizzle white chocolate stripes over the cake pops for fun, unique designs.
