1 cup cooked farro
1/4 cup crumbled feta cheese
1/4 cup chopped roasted red peppers
2 tablespoons finely chopped shallots
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
kosher salt and pepper to taste
