2 large sweet potatoes, peeled (about 1-1/2 pounds)
PAM® Original No-Stick Cooking Spray
2 tablespoons cornstarch
1 teaspoon kosher salt
3 tablespoons vegetable oil, divided
Hunt's® Tomato Ketchup

Cut sweet potatoes into 1/4-inch sticks. Place in large bowl of cold water and let soak 15 minutes.
Preheat oven to 420°F. Line baking sheet with parchment paper and spray with cooking spray.
Drain fries and shake to remove excess water. Place in large dry bowl and toss with cornstarch and salt.
Spread 2 tablespoons oil on baking sheet. Place fries in rows on pan. Drizzle with remaining 1 tablespoon oil. Turn fries one at a time to coat each evenly with oil. Bake 25 minutes. Turn fries and continue baking 15 minutes, until lightly browned.
Turn oven off, open door and leave slightly ajar. Let fries rest 5 minutes before eating, fries will crisp as they sit. Serve with ketchup.
