Hearty chunks of beef with onion, carrots, celery and potatoes in a rich tomato sauce

  • PAM® Original No-Stick Cooking Spray
  • 1 medium onion, chopped (1 med onion = about 1/2 cup)
  • 1 cup baby carrots
  • 2 cups sliced celery
  • 1 pound red potatoes, scrubbed and cubed
  • 2 pounds beef stew meat, cut into chunks
  • 2 teaspoons dried thyme leaves
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, undrained
  • 3/4 cup water
  • 1 can (6 oz each) Hunt's® Tomato Paste

Purchase ingredients from Peapod or Amazon

  1. Spray inside of 3-1/2-quart slow cooker with cooking spray. Place onion over the bottom of slow cooker. Add the following ingredients in this order: carrots, celery, potatoes and beef. Sprinkle with thyme. Pour undrained tomatoes and water over the top of the beef.
  2. Cover; cook on LOW 8 to 10 hours or until meat is tender.
  3. Stir in tomato paste. Cover; cook 10 minutes more on HIGH.

I made this right before Hurricane Sandy hit so that we can have some comfort food to eat. Well my teenage son and my husband love it !! I made no changes . They all ready want me to make it again.

This has been a family favorite for years. I do usually brown the meat the night before. I add everything before work in the crockpot and cook all day. When I get home from work, I make quick rice and supper is done. My family fights for the left overs. Great cool weather or rainy day meal. Comfort food.

This was delicious. Only thing I would say is missing is salt. We salted our individual servings to taste. Didn't really get much onion flavor, but after eating, pearl onions would make an excellent substitution. We're going to be trying that next time.
