BERRY SAUCE:
3 cups quartered fresh strawberries
1 cup fresh raspberries
1/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 tablespoon lemon zest
FUNNEL CAKE:
PAM® Baking Spray
1 pkg (15.25 oz each) Duncan Hines® Classic White Cake Mix
3 tablespoons milk
3 tablespoons vegetable oil
1 egg
1 teaspoon vanilla extract

BERRY SAUCE: Add strawberries, raspberries, brown sugar, vanilla and lemon zest to a sauce pan and cook over medium heat for 5 minutes. Increase heat to medium-high and bring to a boil for 3 minutes, stirring occasionally. Transfer to a bowl and let cool.
FUNNEL CAKE: Preheat air fryer oven to 375°F, line or wrap air fryer tray(s) with aluminum foil. Spray foil with baking spray.
Add cake mix, milk, oil, egg, and vanilla to a large bowl and mix by hand for two minutes until combined. Don’t overmix as this will cause batter to get too airy.
Place batter into piping bag. Leave about two inches empty at the top of the bag so that the batter doesn’t spill out. Cut about a ¼ to ½ of an inch off the tip of the bag.
On top of the foil, pipe the batter out 4 to 5 inches long. Don’t pipe the lines too close together on the tray.
Place the tray with funnel cake into the air fryer for 3 ½ to 4 ½ minutes. Remove from oven and cool for 1 minute. Top air fryer funnel cake dippers with powdered sugar and serve with fruit sauce.
For another tasty fruit topping, try this Lemon Blueberry Sauce. LEMON BLUEBERRY SAUCE: Heat 2 cups blueberries (fresh or frozen), 4 tablespoons lemon Juice, 2 tablespoons lemon zest, ¼ cup brown sugar, and 1 tablespoon vanilla extract in a saucepan for 4 minutes over medium-high heat. Combine 1 tablespoon corn starch and ¾ cup water in a separate bowl and then add to the fruit mixture. Bring to a boil. Reduce heat to medium and cook for 3 minutes, stirring occasionally. Transfer to a bowl and let cool. Top funnel cake with fruit sauce just before serving.
