Gardein Cheeseburger Quesadilla
INGREDIENTS
Burger Sauce:
- ½ cup vegan mayonnaise
- ¼ cup ketchup
- 2 tablespoons sweet pickle relish
- 1 tablespoon dill pickle juice
- 2 teaspoons white vinegar
- Salt and ground black pepper, to taste
Quesadillas:
- 3 tablespoons olive oil
- 1 large minced white onion (about 2 cups)
- 1 (13.7 ounce) package of Gardein Ultimate Beefless Ground
- 2 tablespoons yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 8 extra large flour tortillas
- 2 cups vegan cheddar shreds
For Serving:
- Finely chopped lettuce
- Chopped tomatoes
- Sliced dill pickles
- Burger Sauce (recipe above)
Instructions
Burger Sauce:
- Whisk together all the ingredients in a bowl. Taste and add salt and pepper if necessary. Cover and refrigerate while you prepare the quesadillas.
Quesadillas:
- Heat 3 tablespoons of the olive oil in a large non-stick pan over medium heat. Once the oil is hot, add the onion and cook for 5 to 6 minutes, stirring often.
- Mix in the Gardein Beefless crumbles and season with mustard, garlic powder, onion powder, paprika, and pepper. Give it a good mix to combine all the ingredients. Cook, stirring often, for 6 to 8 minutes, until the crumbles begin to brown. Transfer the beefless ground to a large bowl and wipe the pan clean of any remnants.
- Place a tortilla in the pan. Top one side of the tortilla with about ½ cup of vegan cheese and a generous portion of the seasoned crumbles. Fold the other half of the tortilla over and cook for 3 to 4 minutes per side, until the cheese has melted and the tortilla is golden brown and crispy. Remove from the pan and repeat with the remaining tortillas and crumbles.
- To serve the quesadillas, slice them into quarters. Drizzle each quesadilla with a generous portion of burger sauce and garnish with lettuce, tomatoes, and pickles. Enjoy immediately.
