9 WAYS TO EAT A MORE PLANT-BASED DIET

We’re all told to add more produce and plant-based proteins into our diets. It can be a fun challenge to be creative with produce and grains being the star of the plate. Ditch the everyday, boring salad, and try these healthy plant-based recipes for your next meal!

1. KUNG PAO TOFU STIR FRY

The great thing about tofu is that it can be, well, whatever you want. Sauté it in a pan along with red and yellow peppers, douse it in P.F. Chang’s® Home Menu kung pao sauce, throw garlic, ginger, crisp celery, green onions, and peanuts into the mix, and you’re on your way to a bold weeknight dinner that’s ready in 30 minutes or less.

2. ROASTED CAULIFLOWER SOUP

Anyone who’s gone plant-based know the beauty of a blender. In this case, one-and-a-half pounds of cauliflower plus other good veggies are roasted together, blended with garlic and thyme, and simmered with heavy cream for a rich, creamy, and deeply flavorful dish that will rightly take the place of your favorite lobster bisque.

3. SWEET POTATO & BLACK BEAN HASH WITH ROASTED CORN SALSA

Goodness from the ground up. Hearty sautéed sweet potatoes form a healthy foundation and serve as the perfect base to top with Rosarita® premium black beans. Frontera® roasted corn salsa kicks things up a notch, and really makes the dish start to sing. Finish it off with a perfectly poached egg, and you'll find yourself looking at a new anytime favorite.

4. VEGAN QUESO MAC

Vegan mac and cheese?? Yes, you read that right, and you just have to taste it to believe it! This isn’t any ol’ mac and cheese though. Ro*Tel gives it that south-of-the-border kick while a cashew puree, nutritional yeast, and cornstarch do the heavy lifting to make it just as creamy and indulgent as the real thing.

5. VEGETARIAN SOFRITAS WALKING TACO

This plant-based platter likes to party. Crispy yellow tortilla chips are piled sky high with seared sofritas, beans, grilled corn, roasted peppers and onions, avocado, and tomato for a fun-filled dish that will make you wonder what else is possible on a plant-based diet. Although they’re called “walking tacos,” we’re betting you could have a great time sitting down with them and going to town.

6. PROTEIN-PACKED VEGETABLE QUINOA BOWL WITH SPICY PEANUT SAUCE
