An individual meatloaf recipe with Hunt's Tomatoes and Kraft Parmesan added to the meat and baked in muffin cups. Recipe Source: Kraft Foods, Inc. Kraft® is a registered trademark of Kraft Foods, Inc.

Ingredients
  • 6 tablespoons Kraft® Grated Parmesan Cheese, divided
  • 1 pound extra lean ground beef (95% lean)
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained
  • 1/2 cup dry bread crumbs
  • 1 small yellow onion, finely chopped
  • 1 egg
 
Directions
  1. Heat oven to 375°F.
  2. Reserve 3 tablespoons cheese. Mix remaining 3 tablespoons cheese with all remaining ingredients just until blended.
  3. Press into 12 muffin cups sprayed with cooking spray.
  4. Bake 30 minutes or until done (160°F), sprinkling with reserved cheese for the last 10 minutes.
Cook's Tips

To make ahead: Bake meatloaves as directed. Remove from muffin cups; cool completely. Place in single layer on baking sheet; freeze 1 hour. Transfer to airtight container. Store in freezer up to 1 month. Thaw in refrigerator, then reheat in 375°F oven 20 minutes or until heated through.

Easy, yummy, and nice to have in the freezer for another easy meal for a quick home cooked dinner after a long day. did a potato and a salad... Easy and good!

Made this tonight and it turned out a lot better than I expected! I used a dash of Worcestershire like one of the other comments suggested. I would have been ok without the cheese on top as well. Also, I only used half of a small onion and thought it was a tad "oniony" to my liking. I cooked it for an extra 15 minutes on 350 with foil over them because I noticed they were burning on the surface but I have an old apartment oven that probably needs recalibrated. Overall, it was a delicious dinner that my toddler didn't mind eating. I will be making this quite often.

Very simple recipe to make. Moist meatloaf. I did add a dash of Worcestershire sauce for a little more flavor. Could use just a bit more seasoning to make it 5 stars. Will make it again.
