2 tablespoons canola oil
1/2 cup chopped yellow onion
2 tablespoons Hunt's® Tomato Paste
2 cans (14.5 oz each) Hunt's® Stewed Tomatoes, undrained
1 can (14 oz each) vegetable broth
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/8 teaspoon ground red pepper
2/3 cup seasoned cheese and garlic croutons

Heat oil in large saucepan over medium-high heat; add onion. Cook 2 to 3 minutes or until onion is tender. Add tomato paste; cook and stir until fragrant and lightly browned.
Add undrained tomatoes, broth, Italian seasoning, salt and pepper to saucepan; stir to combine. Reduce heat and simmer 15 minutes. Place half of tomato mixture in blender container; pulse until smooth. Repeat with remaining mixture. Top each serving with croutons.
Tomato mixture may be blended until smooth with an immersion blender in the saucepan.
Use caution when blending hot mixtures.
