A Pot-Sized Pasta recipe with the flavor of tacos made in one pan using ground beef, zesty tomatoes and spaghetti, topped with sour cream

Ingredients
  • 1 pound extra lean ground beef (95% lean)
  • 1 pkg (1.5 oz each) mild taco seasoning mix
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 2-1/2 cups water
  • 8 ounces dry Pot-Sized(tm) Spaghetti, uncooked
  • 6 tablespoons reduced fat sour cream

Directions
  1. Cook beef in large skillet over medium-high heat 7 minutes or until crumbled and no longer pink, stirring occasionally.
  2. Add taco seasoning, undrained tomatoes and water; stir to combine. Add spaghetti; bring to a boil. Cover, reduce heat and cook 10 minutes or until spaghetti is tender, stirring occasionally.
  3. Top each serving with 1 tablespoon sour cream.

Pot-Sized Spaghetti is 5 inches long --- the perfect size to fit in a pan without breaking. If Pot-Sized Spaghetti is not available, break regular spaghetti in half for this recipe.

I love this recipe, but have tweaked to my likes. I make the pasta separately and add at the end, as well as various types of pasta. I also add sliced black olives and onions to the meat mixture. Once its plated I add shredded Mexican cheese too. I make a little different each time, sometimes spicy other times not.

I did this recipe almost to the 'T' and it turned out amazing. The only 2 little things I changed was using angel hair pasta (my fav since I was a kid) and using just 2 1/4 c water. It did end up taking 13 min to cook thru but once I took it off the stove and stirred it, there was no excess water. For us, it made just 4 servings but the sour cream was the cherry on this cake. Such a simple recipe and one that is going to be made over and over in my house. Cheap and easy & filling, just like I like them!

I do not like spicy things so I have revamped this recipe to my taste. #1. I use a lb. of ground turkey. I do not used the tomatoes & green chilies called for. I buy a 14.5 oz can of diced tomatoes and use all of it. I also use either angel hair pasta or thin pasta. Plus, I use almost a pound of spaghetti so it isn't runny. I like sharing recipes so I print out the original recipe and add my version to it and hand it out to strangers at Walmart. Everyone says, oh, that sounds so good, I am going to make that tonight. In my opinion, it is absolutely delicious.
