A refreshing zucchini salad recipe comes together quickly with sliced zucchini, red onion, Parmesan cheese, lemon juice and oregano

Ingredients
  • 4 small zucchini, sliced (4 small = about 4 cups)
  • 1/2 cup sliced red onion
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon Pure Wesson® Canola Oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
 
Directions
  1. Toss together all ingredients in medium bowl.

I love this dish. it is easy and quick to make, and very tasty. You can added to any protein side, and you have a whole healthy meal.

This was a good recipe for a nice change of pace. Even my kids liked it and its hard to get them to eat any veggies. We had leftovers and it was even good the next day.

Great way to eat zucchini, a vegetable that is often disliked. I have also taken this recipe and sauteed the zucchini added other veges, yellow sq., red peppers, mushrooms and cherry tomatoes added a little cooking wine and when you sprinkle the cheese on top it melts and is really good!! I would add another vege to this recipe and marinate a little bit before serving.

I have two small boys who are very hard to please when it comes to food. The actually ate this and then proceeded to ask for seconds with the oldest wanting to eat the rest of the leftovers throughout the next few days. A defiant do again in our house.
