Easy quinoa recipe combines cooked quinoa with tender pieces of beef, asparagus and bell pepper for a healthier main dish

Ingredients
  • 1-1/2 cups white quinoa, uncooked
  • PAM® Original No-Stick Cooking Spray
  • 3/4 pound boneless beef top sirloin steak, cut into bite-size pieces
  • 1/2 teaspoon reduced sodium Montreal steak seasoning
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped red bell pepper
  • 1 pkg (9 oz each) frozen asparagus cuts
  • 2-1/2 tablespoons La Choy® Soy Sauce
 
Directions
  1. Cook quinoa according to package directions. Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.
  2. Sprinkle beef with steak seasoning; add to skillet and cook 2 to 3 minutes. Add onion and bell pepper; cook 2 to 3 minutes more or until beef is browned, stirring occasionally. Add asparagus; cover and cook 3 to 4 minutes or until asparagus is hot.
  3. Add soy sauce to cooked quinoa; stir gently to combine. Toss quinoa with beef mixture.
Cook's Tips

Pre-cut beef for stir-fry, found in the supermarket's meat department, may be used in place of sirloin steak. Quinoa typically is found in the rice and pasta section of supermarkets. Rinse well before cooking to remove the natural bitter coating, if it is not pre-washed. For gluten free preparation, confirm all recipe ingredients are gluten free by reading product labels each time you make this recipe.

Very easy to make, I seasoned my steak about an hour prior to cooking. I would recommend searing the steak bites then removing them then add the veggies and allow time for them to cook. Depending on how crunchy you like your veggies will depend on how long you let them cook. I like my veggies soft with a slight crunch so they take a bit of time. After about 7 minutes of cooking the veggies, I added back in the steak for the remaining 3 minutes. Lastly I wouldn't use 1 1/2 cups of quinoa next time, rather just 1 cup as I thought the Quinoa overpowered everything after mixing it in

Very tasty. My husband And boys who are super picky loved it. We are not soy sauce fans and I didn't want to add the Montreal seasoning, so I just seasoned with simple salt and pepper. Everyone loves it. Will definitely be making this again. Thanks.

I thought that was very very good. Put a lot of seasoning on my steak when I cooked it. My husband is not a fan of quinoa, and suggested next time brown rice.
