Pork and vegetables slow-cooked together with herb pasta sauce for a delicious one-dish meal

  • PAM® Original No-Stick Cooking Spray
  • 2 cups baby carrots
  • 1 pound small red-skinned potatoes, unpeeled, quartered
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained
  • 1-1/2 pounds thick cut boneless pork chops, cut into 24 pieces
  • 1 can (24 oz each) Hunt's® Garlic & Herb Pasta Sauce
  • 1 tablespoon granulated sugar
  • 1 can (14.5 oz each) cut green beans, drained

  1. Spray inside of 4-quart slow cooker with cooking spray. Add carrots, potatoes, drained tomatoes, meat, pasta sauce and sugar to slow cooker.
  2. Cover; cook on LOW 8 hours or until pork is tender. Stir in green beans just before serving.

Tasty! I followed the recipe except I substituted peas for green beans because I did have any, pork chops for pork stew, and I substituted carrots for corn. I put the potatoes at the bottom, the stew cubes on top of it with spices of my choice. Then I poured the hunts tomato sauce on top and let it cook 8 hours overnight on low in the crockpot. About one hour before it was done I added the peas and corn to it. Yummy Yummy Yummy

Overall, a pretty good...and more importantly...easy recipe. Prep time is minimal and can easily be done in the morning before going off to work. Trimming and cutting up the pork is probably the most time consuming, so that could be done the night before and kept in the refrigerator. Also, adding a couple of bay leaves won't hurt, as well as any of your favorite dry seasonings. Fresh herbs, like thyme, won't hold up to all day slow cooking, but dry will. Layer the vegetables in the bottom of the slow cooker, then the meat, dry seasonings and then cover it all with the pasta sauce. Cover and cook on low for 8 hours or more. When you come home from work, dinner is ready and will smell like Heaven!!

I never write reviews, but I have made this dish twice and it is delicious. It is such a nice alternative to beef stew. I do use no salt tomato sauce to keep the sodium content lower and I add a box of frozen cut green beans the last hour and a half. It is a great meal, especially on a cold winter night. Enjoy!!!
