A quick healthier breakfast made with Egg Beaters, fresh baby kale and Parmesan cheese for a kale and scrambled egg recipe

Ingredients
  • PAM® Olive Oil No-Stick Cooking Spray
  • 1/4 cup finely chopped yellow onion
  • 3/4 cup chopped fresh baby kale
  • 1/8 teaspoon garlic salt
  • 2 Smart Cups™ Egg Beaters® Original (2 Smart Cups = 1 cup)
  • 2 tablespoons shredded Parmesan cheese
 
Directions
  1. Spray large skillet with cooking spray; heat over medium heat. Add onion; cook 2 minutes or until crisp-tender, stirring occasionally. Add kale and garlic salt; cook and stir 1 minute more or until kale wilts.
  2. Add Egg Beaters; cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
  3. Top with cheese. Serve immediately.
