1/2 cup chopped onion
2 teaspoons finely chopped garlic
1 can (28 oz each) Hunt's® Whole Peeled Plum Tomatoes with Basil, undrained, broken into bite-size pieces
8 ounces dry whole grain penne pasta, uncooked
1/3 cup shredded Parmesan cheese
1/3 cup pine nuts, toasted
1/4 teaspoon kosher salt
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Lightly spray large skillet with cooking spray; heat over medium heat. When hot, add onion and garlic; cook 2 to 3 minutes or until onion is lightly browned and tender.
Add undrained tomatoes; reduce heat and simmer 20 to 25 minutes or until slightly thickened. Meanwhile, prepare pasta according to package directions. Drain and add pasta to tomato mixture.
Stir in cheese, pine nuts and salt. Sprinkle with parsley and serve.
Extend this dish by adding leftover rotisserie chicken for added protein.
