Pasta recipe for peanut noodles with stir fry vegetables served with grilled chicken skewers flavored with more peanut sauce. Recipe by Jim Higley of Bobblehead Dad, winner of Ready Set Eat: The Great Dad Cook-Off

Ingredients
  • PAM® Grilling Spray
  • 8 ounces dry linguine pasta, uncooked
  • 1 cup Peter Pan® Crunchy Peanut Butter
  • 1/2 cup hot water
  • 1/4 cup La Choy® Soy Sauce
  • 2 tablespoons grated fresh ginger
  • 1-1/4 pounds boneless skinless chicken breasts, cut into 1-1/2-inch pieces
  • 4 tablespoons toasted sesame oil, divided
  • 1 can (28 oz each) La Choy® Stir Fry Vegetables, drained
 
Directions
  1. Spray grate of outdoor grill with grilling spray. Preheat grill to medium-high heat. Cook pasta according to package directions or until al dente.
  2. Meanwhile, whisk together peanut butter, water, soy sauce and ginger in medium bowl until smooth. Divide peanut sauce into 2 bowls.
  3. Thread chicken pieces onto skewers; brush liberally with peanut sauce from 1 bowl. Grill chicken 7 minutes; turn and grill 7 minutes more or until juices run clear.
  4. Meanwhile, heat 2 tablespoons oil in 12-inch skillet over medium-high heat. Add stir fry vegetables; cook and stir 5 minutes or until softened.
  5. Drain pasta; add to skillet. Drizzle with remaining 2 tablespoons oil; toss to combine. Add peanut sauce from second bowl; toss together. Serve noodles with chicken skewers.

Made this last night with a few alterations, and it was delish! I used the sesame oil more sparingly since it's so strong, and opted for fresh baby spring peas and fresh red bell pepper over canned stir fry veggies. The result was super yummy, and my kids loved it. Next tiime though, I'll make more of the sauce as additional would've been great!
