A slow cooker beef stew recipe with barley, tomatoes and vegetables for a hearty entree

Ingredients
  • PAM® Original No-Stick Cooking Spray
  • 3-1/2 cups lower sodium beef broth
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, undrained
  • 1 can (6 oz each) Hunt's® Tomato Paste
  • 1/2 teaspoon onion salt
  • 1 pound cubed beef stew meat
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 3/4 cup quick cook barley, uncooked
  • 1/4 teaspoon granulated sugar

Directions
  1. Spray inside of 4-quart slow cooker with cooking spray. Combine broth, undrained tomatoes, tomato paste and onion salt in slow cooker. Add stew meat, carrots and celery to slow cooker.
  2. Cover; cook on LOW 7 hours or HIGH 3-1/2 hours. Stir in barley and sugar; cover and cook on HIGH 30 minutes more or until barley is tender.

Too much tomato for a beef soup, leave out the tomato paste next time.

You really need to 'brown' the beef stew meat first! Coat in flour and fry w/some olive oil so the outside of the meat gets a nice dark crust. I also add potatoes to the mix....just 2 cut up....much better, also add brown sugar instead of granulated sugar....there ya go!!

I was not thrilled with this. the tomato is too overpowering, hides the taste of the meat and veggies so it all tastes the same. I would also prefer more assorted veggies all of which add taste. The barley was undercooked and rubbery, need to add it sooner then the recipe says. I would not make it again.

Another way to 'fix' this recipe is to use the spicy tomato sauce and paste. For those of you that don't like the huge whopping 1/4 spoon of sugar, it's added to cut the acid in the tomato paste. Garlic (Fresh!) does this, to an extent, as well, but not nearly as well, or as good, as sugar. I actually use a little more, (a tablespoon or so), but it really cuts the tomato acid taste and doesn't add a single calorie! Use a 1/2-1 teaspoon of oil from a jar of gardiniere instead of the Pam. Usually, it's very low fat oil and low calorie, since it's full of spices, too. I live alone since my divorce and found that recipes like this really stretch that food buckaroo! I share with a neighbor in my condo building and freeze half for a later date.

I just love slow cooker recipes and beef is my favorite choice for slow cooking. It can be tenderized with today's cost's, that is a consideration when using the cheaper cut's of beef. Also barley is very nutritional and inexpensive. I just love this recipe!!
