Another way to 'fix' this recipe is to use the spicy tomato sauce and paste. For those of you that don't like the huge whopping 1/4 spoon of sugar, it's added to cut the acid in the tomato paste. Garlic (Fresh!) does this, to an extent, as well, but not nearly as well, or as good, as sugar. I actually use a little more, (a tablespoon or so), but it really cuts the tomato acid taste and doesn't add a single calorie!
Use a 1/2-1 teaspoon of oil from a jar of gardiniere instead of the Pam. Usually, it's very low fat oil and low calorie, since it's full of spices, too.
I live alone since my divorce and found that recipes like this really stretch that food buckaroo! I share with a neighbor in my condo building and freeze half for a later date.
