Ingredients
- PAM® Original No-Stick Cooking Spray
- 1 can (16 oz each) Rosarita® No Fat Traditional Refried Beans
- 3/4 cup Egg Beaters® Original
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 8 yellow corn tortillas (6 inch)
- 1/4 cup shredded sharp Cheddar cheese
- 2 tablespoons sliced green onions

Directions
- Spray large (11 to 12-inch) nonstick skillet with cooking spray. Spread beans in bottom of skillet. Make 4 deep depressions (about 3-1/2 inches across) in beans, pushing beans to center and sides of skillet. Fill depressions with Egg Beaters. Cover skillet. Cook over medium heat 7 to 10 minutes or until Egg Beaters are set.
- Meanwhile, place drained tomatoes in medium microwave-safe bowl. Microwave on HIGH 1 to 1-1/2 minutes or until hot. Wrap tortillas in paper towels; microwave on HIGH 45 to 60 seconds or until warm.
- Sprinkle cheese and onions over beans and Egg Beaters. Overlap 2 tortillas on each serving plate. Top with beans and Egg Beaters. Serve with tomatoes.
Cook's Tips
Make the depressions in the beans as deep as possible so the Egg Beaters stay in nice rounds. If they do leak out a little -- no problem. Just spoon them onto the tortillas anyway!

It's great for dinner or breakfast. The beans hold you over longer throught the day. We love it and it doesn't take allot of time to make.
This is definitely a quick and easy recipe to make, and it's a great option for those "breakfast for dinner" nights. There's not a whole lot of prep work to be done, and even though there are three different components to prepare (refried beans/egg mix, diced tomatoes and corn tortillas), it is still simple enough to pull together while making sure everything is served hot (something I usually have a hard time with in the kitchen!). Visually, this colorful dish is very appealing, but the goodness doesn't end there - it's very tasty to boot! My boyfriend and I both liked it a lot. It reminded us of a layered dip, except that the "dip" is inside a tortilla and eaten like a burrito. The refried beans and egg mix really paired nicely with the diced tomatoes with green chiles. And cheddar cheese is always a delicious addition! We will definitely make this again, as it took very little time and was very yummy.
This recipe lends itself to lots of options. As is, it's pretty darn good but my son prefers flour tortillas over corn so next time we will change that. We both also thought cilantro makes a nice addition. Since there were only two of us home during brunch, there was plenty left so my son tasted some of the egg mixture just out of the pan and he said that this is perfect even without the tortillas for those who want to avoid additional carbs. I love that this is something that can be whipped up anytime, day or night if you keep a well stocked kitchen. I always have the Ro-Tel diced tomatoes and refried beans on hand. And I also always keep extra grated cheese in the freezer so I never run out. This way, if I get unexpected guests, I can whip up something special in a hurry and this dish serves well anytime of day.
