Hot spaghetti tossed with ground beef, spicy tomatoes, onion and black beans for a Tex-Mex twist

Ingredients
  • 8 ounces dry spaghetti, uncooked
  • PAM® Original No-Stick Cooking Spray
  • 3/4 pound ground round beef (85% lean)
  • 1 cup chopped onion
  • 1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 2 cans (8 oz each) Hunt's® Tomato Sauce
  • 1/2 teaspoon ground cumin

Directions
  1. Cook spaghetti according to package directions, omitting salt. Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.
  2. Add beef and onion. Cook 5 minutes or until meat is browned and onion is tender, stirring occasionally; drain. Add beans, undrained tomatoes, sauce and cumin. Reduce heat to medium-low; simmer 10 minutes, stirring occasionally.
  3. Drain spaghetti; add to skillet and toss with meat mixture.

Breaking spaghetti in half before cooking will make it easier to toss with meat mixture. Spaghetti may be topped with shredded cheese, sour cream or green onions, if desired.

Just tried out this recipe super easy and super tasty, plus so much protein perfect for a hungry Mother to be. I've been trying to find ways to feed myself enough calories for myself and the baby with all the right nutrition and this is just right for me. Loved it ate two whole bowls and can't wait for leftovers at dinner time. MM...MM...good!

The most picky eaters anyone should ever have to feed. Followed the recipe only adding a couple dashes of Garlic Salt to the meat / onions while browning, Used Kidney Beans, then 1 tsp of cumin and a couple dashed of TOBASCO along with the remaining ingredients - They loved it - Served with Artisan Garlic Bread - Grandson wanted to save some for his lunch tomorrow - Will definitely make this again -

you can switch black beans with red beans or kidney,wiith kidney it gives a very good taste over all ,oh and add a little salt and pepper,and 1/4 tsp sugar ahhhhhh.
