A heart healthy recipe for turkey chili made with lean ground turkey, stewed tomatoes and kidney beans

Ingredients
  • PAM® Original No-Stick Cooking Spray
  • 1 pound lean ground turkey
  • 3/4 cup chopped yellow onion
  • 1 can (14.5 oz each) Hunt's® Stewed Tomatoes-No Salt Added, undrained
  • 1 can (6 oz each) Hunt's® Tomato Paste-No Salt Added
  • 1 can (16 oz each) dark red kidney beans, undrained
  • 1 cup water
  • 1 pkg (1.25 oz each) chili seasoning mix
  • 1/2 cup shredded Cheddar cheese

Directions
  1. Spray large saucepan with cooking spray; heat over medium-high heat. Add turkey and onion; cook 5 minutes or until turkey is crumbled and no longer pink, stirring occasionally.
  2. Add undrained tomatoes; break up with spoon. Add tomato paste, beans, water and chili seasoning mix; stir to combine.
  3. Bring to a boil. Reduce heat and simmer 15 minutes or until chili has thickened slightly, stirring occasionally. Top each serving evenly with cheese.

Believe it or not, I'd never cooked with ground turkey before. I bought 1.5 lbs of ground Jenny-O turkey and was pleasantly surprised. This recipe was just too small an amount for us, so I doubled the tomatoes and the kidney beans. Still used only a tiny can of tomato paste, though. I used McCormick chili seasoning which was excellent and a whole onion. My cook times were very different...once turkey and onion were cooked and tomatoes and tomato paste were added, I added the seasoning, then simmered on low, stirring occasionally for 45 minutes. After adding the beans, I lowered the heat again and cooked for another hour. This was really good. My husband liked it better than my regular recipe.

A good recipe for left over roasted turkey. Cube turkery. Add other ingredients except kidney beans. No self respecting chili cooker would use any bean except pinto or red bean.
