Fresh cucumber salad recipe combines cucumbers and petite diced tomatoes in a creamy yogurt sauce with dill

Ingredients
  • 1/2 cup plain low-fat yogurt
  • 1/4 cup light Italian dressing
  • 2 teaspoons dried dill weed
  • 2 large cucumbers, halved lengthwise, sliced (2 large = 3 cups)
  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained
  • 1/4 cup thinly sliced red onion
  • 1/8 teaspoon salt
 
Directions
  1. Stir together yogurt, dressing and dill in large bowl. Add all remaining ingredients; stir gently to combine.

I have found that salting cucumbers overnight will reduce the water content. This works well with most cucumber recipes.

Make with Greek yogurt so it's not too watery. Use fresh tomatoes not canned and use fresh dill of you have it. Excellent

I too found this watered down. So l remade it and changed a few things as l chopped up my cucumbers, diced a small onion, added a med garlic glove, used a Greek yogurt, added fresh dill weed, salt n pepper to taste and refrigerated for 2 hrs covered...came out fantastic! My guests asked for my recipe! The greek yogurt is what helps keep it thick n dicing your cuc! Wonderful to eat alone or with rice or pasta dishes.

Sarah-- I did seed the cucumber. It was still watery. Thanks for reading my review, though. It's the first I've ever left for anything.

It can be a good recipe. However I've found using sour cream works better. Add a little fresh ground black pepper to top.

Very light and tasty salad!!! Left out the tomatoes (don't like canned much)... And to other reviews try seeding your cucumbers then it will water down less....
