Savory chicken with a sweet and tart cranberry sauce

Sale items for:
  • 1 tablespoon Pure Wesson® Canola Oil
  • 2 boneless skinless chicken breasts (2 breasts = 10 oz)
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 2/3 cup cranberry juice cocktail
  • 2 teaspoons cornstarch
  • 1-1/2 teaspoons firmly packed brown sugar
  • 1/4 cup dried cranberries
  1. Heat oil in medium skillet over medium-high heat. Sprinkle chicken with oregano and salt. Add chicken; cook 12 to 15 minutes or until no longer pink in centers (165°F), turning once.
  2. Meanwhile, stir together juice, cornstarch and brown sugar in microwave-safe 1-cup measure or small bowl until blended; add cranberries. Microwave on HIGH 3 minutes or until sauce boils and thickens, stirring after every minute. Serve sauce with chicken.

Great taste, easy to do, however too much sugar in dried cranberries so I used fresh and cooked them in microwave a little longer until they began to burst.
