An Asian flavor-influenced carrot recipe with cooked carrots tossed in a peanut sauce made with teriyaki sauce and crunchy peanut butter

Ingredients
  • 2 cups fresh baby carrots
  • 1 cup water
  • 1/3 cup La Choy® Teriyaki Stir Fry Sauce-Marinade
  • 1 tablespoon Peter Pan® Crunchy Peanut Butter
  • 1/8 teaspoon salt
 
Directions
  1. Place carrots and water in medium saucepan. Cover; bring to a boil over medium heat. Cook 10 minutes or until tender. Drain.
  2. Add stir fry sauce, peanut butter and salt to carrots; stir until coated.

I really cannot say enough about these carrots. I'm not a big "veggie" person to begin with so that is why I only give these four stars but let's just say that a little extra brown sugar goes a long way. I made them with pork chops which I grilled as we are trying to make healthier choices in our diet which isn't a bad thing. Enjoy this recipe
