1 tablespoon olive oil
1 pkg (13.7 oz each) Gardein® Plant-Based Ground Be'f
3/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 cups vegetable broth
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
2 cups Birds Eye® Mixed Vegetables
1-1/2 cups instant brown rice, uncooked

Heat oil in a deep 12-inch skillet set over medium heat. Cook ground be'f, onion, garlic powder and salt about 5 to 7 minutes or until browned and heated through. Remove from skillet and set aside; keep warm.
Add all remaining ingredients to skillet. Stir to combine and bring to a boil. Cover and reduce heat to medium-low. Cook 10 to 12 minutes or until rice is tender and is desired consistency. Stir in ground be'f with onion and serve.
A large saucepan or Dutch oven may be substituted for the deep skillet.
