Egg Beaters with cheese, bacon bits and green onion microwaved in a mug for a quick breakfast

  • PAM® Original No-Stick Cooking Spray
  • 1/2 cup (4 oz) Egg Beaters® Original
  • 2 tablespoons shredded Cheddar cheese, divided
  • 1 tablespoon real bacon bits
  • 2 teaspoons sliced green onion
  • Dash ground black pepper

Directions
  1. Spray inside of large microwave-safe mug with cooking spray.
  2. Stir together Egg Beaters, 1 tablespoon cheese, bacon, onion and pepper in mug.
  3. Microwave on HIGH 1 minute. Stir; microwave 30 seconds more or until set. Top with remaining 1 tablespoon cheese. Serve immediately.
Cook's Tips

The scrambler puffs up and fills the mug while cooking. It falls quickly once removed from microwave. Use a large (15-ounce) microwave-safe mug to hold the ingredients and to reduce the chance of overflow. Mugs that are wider and shorter work best. A 2-cup glass measure may be used as well. Microwave wattages vary; adjust cook time as needed. Cook the scrambler just until the egg is set.

Is really great in my 1200w mike for about 2 min. No stir. Just tried it with Jerk Chicken seasoning & butter. Tossed a slide of smoked gouda on top when it finished and shut the door a minute to let the cheese melt. Yum.

Ok, so the product was not bad and the cup I chose for cooking was great since I did not have a sticking issue, but what I had to go through just to get the cooking instructions....you have got to be kidding me!! Also, the packaging is highly deceptive as it looks like there would be cheese & bacon in the mix not that they need to be added as it states when I went online. Oh boy has this turned me off from ever buying an egg beaters product again!

I was highly dubious about egg beaters in general and this recipe in particular. The corporate synergies required to make this recipe possible was unsettling. But it's delicious and easy. I am now a believer. I use about 3 cartons of egg beaters per week and started frequenting chat rooms of like minded folks. I am starting to suspect the egg beaters chat rooms have nothing to do this delicious product and are really about some tainted variant of a rusty trombone. Love egg beaters! 5 stars! This recipe makes me smile in the morning!

I sprayed the cooking spray until the spray stopped spraying and I couldn't spray any more that's when I knew I had enough because the last time I tried to make this cleaning the mug was impossible I had to throw the mug away but if you spray enough spray it's not only delicious but a real quick clean up too that's four stars because I took off a star for that first time even though it was kind of my fault
