Spicy Chicken Sandwiches for Two

Ground chicken patties, flavored with cheese and zesty tomatoes, are served in pieces of French bread with a tomato-mayo spread

Ingredients:

  • 1/3 cup (1/2 of 10-oz can) drained Ro*TelŽ Original Diced Tomatoes & Green Chilies
  • 1/2 pound ground chicken
  • 1/4 cup shredded Cheddar cheese
  • 1-1/2 teaspoons Pure WessonŽ Canola Oil
  • 2-1/2 tablespoons light mayonnaise
  • 1/2 loaf French bread (1/2 loaf = 6 oz)
  • 2 leaves green leaf lettuce

Directions

  1. Place 2 tablespoons drained tomatoes in small bowl; set aside. Combine remaining drained tomatoes, chicken and cheese in medium bowl. Shape mixture into 2 rectangle-shaped patties (5x3 inches), about 1/2-inch thick.
  2. Heat oil in medium nonstick skillet over medium-high heat. Cook patties 5 to 6 minutes per side or until no longer pink in centers (165°F). Meanwhile, add mayonnaise to reserved tomatoes; stir together.
  3. Cut bread into 2 pieces, about 5 inches each. Cut each piece in half lengthwise. Spread tomato-mayonnaise mixture on cut sides of bread. Place 1 lettuce leaf on bottom half of each piece; top with chicken patty. Cover chicken with top halves of bread. Serve immediately.
